My Favourite Peony Variety
To be honest, I change my mind on this all the time. I love all peonies, truly! But if I had to choose one peony, it would be Etched Salmon.
She’s not a commonly available variety in New Zealand, so I don’t see her often anymore. But every time I do, I fall in love all over again.
The colour is almost impossible to describe. She’s somewhere between coral, baby pink and the tiniest hint of lilac. She changes as she opens and somehow manages to look completely different from every angle.
She’s one of those flowers where a photo just doesn’t quite do her justice.

A Florist’s Secret: How We Time Peonies for Weddings
When peonies arrive at the studio, they don’t look anything like the huge fluffy flowers you see on Pinterest.
They arrive as incredibly tight little buds.
Every year, despite my experience, I still have a tiny moment of panic wondering, “Are these actually going to open in time?”
And every year, they surprise me.
Within one to two days (sometimes even just a few hours), they start moving. The petals begin unfolding, and suddenly those tiny buds transform into the flowers everyone dreams about.
This is where temperature control becomes incredibly important.
Keeping peonies cool slows down their opening process, allowing florists to carefully time them for your wedding day. The goal isn’t necessarily for them to be fully blown open when they arrive at your venue. You want them beautifully open, but with enough life left that they continue to unfold throughout the day.
Because timing is everything.
Are Peonies Expensive for Wedding Flowers?
Peonies are a premium wedding flower, especially because their season is so limited.
At the very beginning of the season, prices are usually at their highest due to limited supply and high demand. As more flowers become available, pricing often settles.
White peonies tend to remain at a premium price point because:
- There are fewer available.
- They are hugely popular.
- They are effortlessly elegant.
Honestly, white peonies are about as chic as flowers get.
